Results: The authors used EEL to perform fluorescence titrations on a range of carbohydrates, and the results showed that EEL had broad carbohydrate specificity. The authors used these data to guide homology modeling to investigate the structural basis for carbohydrate recognition by EEL. The results demonstrated that EEL had a β-trefoil fold structure and contained three potential carbohydrate-binding sites (α, β, and γ sites were shown in yellow, green, and pink, respectively), each site was contained in a single loop 20-30 amino acids in length, with binding sites typically starting with a leucine residue and ending with a tryptophan residue.
