Mannitol

Mannitol, also known as mannite or mannitolum, is a common natural carbohydrate. It is widely distributed in many edible fruits and vegetables, such as pineapple, celery, pumpkin, and carrots. Microorganisms such as bacteria, yeast, and seaweed can also produce mannitol. In 1806, mannitol was first isolated and characterized from the honeydew honey tree by Proust. The content of mannitol is various in different species. For example, brown algae under photosynthesis can produce 10-20% mannitol, while Fraxinus ornus tree bark can be heated to produce 30-50% mannitol. In addition, the content of mannitol is also related to its effect in higher plants. For example, the mannitol content of F. excelsior L. leaves is twice as high under drought conditions as under well-watered conditions.

Mannitol can be used as food ingredient for dieters and diabetics due to its zero glycemic index and insulin index; Used as a sweetener in sugar-free chewing gum; Used in flavored ice cream and chocolate to increase the firmness of the crust; Used in the bakery industry to maintain the color appearance of products.
