Functions of Galactooligosaccharide (GOS)

GOS is also known as oligogalactosyllactose, oligogalactose, and oligolactose. Because of the configuration of its glycosidic bonds, GOS largely resists hydrolysis by salivary and intestinal digestive enzymes. GOS belongs to prebiotics, and supports the natural defenses of the human body via the gut microflora, indirectly by increasing the number of bacteria in the gut and inhibiting the binding or survival of Escherichia coli, Salmonella typhimurium, and Clostridia. GOS positively influences the immune system indirectly through the production of antimicrobial substances, reducing the proliferation of pathogenic bacteria.

GOS Analysis Service at CD BioGlyco

Currently, the most widely used method for the determination of total GOS content in food products is high-performance anion-exchange chromatography with pulsed amperometric detection (HPAEC-PAD). We use HPAEC-PAD to detect the content and purity of GOS in various functional foods referring to the AOAC official method 2001.02. This is the only fully validated official method for the determination of GOS in food samples. The working principle is the comparison of a control solution (treated with the deactivated enzyme) with one that has been treated and hydrolyzed with the active enzyme β-galactosidase from Aspergillus oryzae.

We use high-performance liquid chromatography (HPLC) to separate, identify, and quantify GOS at very low concentrations or dissolved in solvents. Gas chromatography coupled with mass spectrometry (GC-MS) and HPLC with fluorescence detector (HPLC-FLD) are also commonly used separation and characterization techniques, providing a basis for the study of structural information of polysaccharides. These techniques are applied to the quality assessment of new functional ingredients in herbal medicines and functional foods.
