What Is Fructose?

Fructose is a simple ketose found in many fruits and vegetables, such as apples, watermelons, and oranges. Fructose was first isolated from sucrose in 1847 by the French chemist Augustin-Pierre Dubrunfaut. Now, fructose has been widely used in the food, pharmaceutical, and chemical industries. In food, fructose is used as the main sugar-containing additive in beverages and desserts. To make it more palatable, fructose is added to the drug as an excipient. In the chemical industry, fructose is the starting material for the formation of bio-based. In addition, fructose is the main component of sucrose, fructan, and inulin.

Fructose Metabolism

Fructose, glucose, and galactose are three dietary monosaccharides that can be absorbed directly into the bloodstream by the body. The main site of fructose metabolism is the liver, where fructose is phosphorylated to form fructose-1-phosphate. Under the action of liver aldolase, fructose-1-phosphate is cleaved to form glyceraldehyde and dihydroxyacetone phosphate (DHAP). DHAP is an intermediate metabolite of glycolysis and gluconeogenesis. Glyceraldehyde is phosphorylated to form glyceraldehyde-3-phosphate, another intermediate in glycolysis. Studies have shown that fructose has potential adverse effects on lipid metabolism, body weight, and more. Long-term intake of high levels of dietary fructose increases the risk of coronary heart disease.
