Saturated Fatty Acid Analysis

Overview of SFAs

Fatty acids (FAs) are divided into SFAs, monounsaturated fatty acids (MUFAs), and polyunsaturated fatty acids (PUFAs) according to the difference between saturation and unsaturation of the hydrocarbon chain. SFAs have no carbon-carbon double bonds in their molecules and usually exist in the form of methyl esters or glycerides. SFAs are mostly found in animal fat and milk fat. They are one of the basic components of lipids. The common SFAs are caprylic acid, capric acid, lauric acid, myristic acid, palmitic acid, stearic acid, and arachidic acid.

However, excessive intake of SFAs leads to increased blood cholesterol, triacylglycerol, and low-density lipoprotein cholesterol (LDL-C), secondary to narrowing of the arterial lumen, forming atherosclerosis, and increasing the risk of coronary heart disease.

  • Liquid chromatography / electron spray Ionization / mass spectrum (LC/ESI/MS) analysis of SFAs

    CD BioGlyco derivatizes SFAs with trimethylamine ethyl iodide to increase the sensitivity in ESI mode. The LC/ESI/MS multiple reaction monitoring method is established to quantitatively analyze SFAs.

  • Infrared spectroscopy (IR) to identify SFAs and salts

    CD BioGlyco performs IR testing and analysis on SFAs and their salts by KBr tableting method to obtain IR spectra. Through the analysis of the characteristic peaks of IR, we identify and discover the substances containing SFAs in nature.

  • Quantitative analysis of SFAs by nuclear magnetic resonance spectroscopy (NMR)

    CD BioGlyco uses NMR to analyze the 1H-NMR spectrum of various vegetable oils without any pretreatment of the raw materials, and assign the proton characteristic peaks of SFAs to quantitatively analyze SFAs.
