Applications
Amylose is a polydextrose polysaccharide, which is made into starch together with amylopectin. The glycosidic bond of pullulan is α-1,4 bond. Amylose is used to identify, differentiate and characterize amylases. It can also be used as a thickener, gelling agent and emulsion stabilizer.
