Recombinant sialidase V from Vibrio cholerae is an exoglycosidase and cleaves all nonreducing terminal α(2-3,6,8)-linked-sialic acid.

One unit will catalyze the release of 1 μmol of methylumbelliferone from MU-NANA [2'-(4-methylumbelliferyl)- α-d-N-acetylneuraminic acid] per minute at pH 5.5 at 37°C.
Applications
Recombinant sialidase V from Vibrio cholerae can be used for sialic acid analysis, sialic acid removal, and desialylation.
